How do chickens stay fit? They eggs-ercise! Speaking of chickens, is anyone else wondering what egg-actly is going on with the price of eggs? After some eggs-haustive research, I am still not an egg-spert, but let me try to eggs-plain what I have learned.
First, I learned that Ohio leads the nation in bird flu cases. Fewer chickens equals fewer eggs. That is not good.
Secondly, eggs tend to be a “loss leader” which is a common business strategy where inexpensive items are priced under wholesale with the goal to get customers to buy other higher profit items while they are at the store. Two examples from Costco are the $1.50 hot dog and drink deal and their $4.99 rotisserie chickens.
Thirdly, there are risks to loss leader pricing, such as some customers who only buy loss leaders and then shop elsewhere for other items or when customers buy so much of a loss leader that supplies run out. In the case of eggs, supplies are running low, thus limits are being placed on them.
For those who get upset with restaurants for adding surcharges or raising their prices, keep in mind that they do not operate on a loss leader strategy, thus they are likely paying more for wholesale eggs, and the egg crisis may continue to be egg-stremely frustrating with even higher prices. Something that we can be egg-cited about is that there are still fresh egg stands throughout Brimfield.
If you do not have an egg to crack, desperation can lead to inspiration. I have listed a few egg-cellent replacements for egg-free baking. Each egg can be replaced with either ¼ C mashed banana, applesauce, pumpkin puree, yogurt or buttermilk or by mixing 1 Tbsp. ground flaxseed with 3 Tbsp. water. Also, combining 1 Tbsp. of vinegar and 1 tsp. of baking soda creates a chemical reaction that releases carbon dioxide, replacing the leavening typically achieved with eggs to produce light and airy baked goods.

2025 NOPEC Community Event Sponsorship Grant
The Northeast Ohio Public Energy Council (NOPEC) Community Event Sponsorship Program provides financial support to organizations within the Brimfield Township community. Brimfield Township is seeking applications from non-profit organizations for the 2025 Community Event Sponsorship Grant in the amount of $1,500. If selected for this grant, the funds received must be used to sponsor a one-time event that is free and open to the public and takes place in Brimfield Township during the 2025 calendar year.
Applications must be submitted in person or via email on or before Friday, April 11, 2025, at 4 p.m. Applicants will be notified of approval or denial on or before Wednesday, April 16, 2025. Final thoughts
I recently had the opportunity to meet with administrators from The Village of St. Edwards, a non-profit senior facility being built next to Aldis. It was evident that community engagement is very important to their mission, and it promises to be an asset to Brimfield.
